Buy some parchment paper at the store. Pull off piece a little larger than 18 inch and fold in half to make a triangle. Unfold and put a fillet two to three inches wide in the center. Add some sliced garlic and onion and any other spice and vegetable sliced julienne. Add a little wine and olive oil and fold into triangle. Now fold the open edge a few times to close it. Fold the other edge the same way. Slide it onto a cookie sheet and cook at 350 degrees for 20 to 25 minutes. The fish will steam and the triangle will rise up. You slide it onto a plate and let the person who will eat it, open it. If there is several people let everyone open there triangle at the same time. They can cut the top with a knife or scissors. The steam is released with all of the fragrances of the package. The steam will rise up and everyone will smell the flavors. Easy to prepare and you will impress your guests. This recipe was from a kayak fisherman named Yanni. He is a chef and he has a website of seafood recipes. Fishermansbelly.com is his Web site. Check it out and make it a favorite or bookmark it. You can tap on one of the food pictures and see the video and recipe below the video. Did you know you can cook lobster in a microwave and cook it properly? When you steam or boil lobster it is releasing it's flavor and juices into the water. Then like most people you pour the water out down the drain. Think about it. Fishermansbelly.com is also the official website for cooking on bloodydecks.com. Yanni is an artist an a culinary professional.
Go to youtube and put fishermansbelly.com in the search. Now you have a really big problem.....which one of Yanni's videos do you watch first?

That's a great idea fishinphil. I do pretty much the exact same thing but with foil. I never mess around too much with fish. Keep it simple. Never understand why people put such things as cajun spice all over it.
